Erythritol, also known as Phycite, is a natural, zero calorie, filling sweetener that can replace sucrose. It has a clear and sweet taste similar to sucrose. It is widely found in natural animals and plants, such as algae, mushrooms,melons and grapes, as well as in human eyeballs, serum
and semen. Fermented foods such as wine, beer and soy sauce also contain erythritol, but the content is very low.
At present,Erythritol is the only functional sugar alcohol produced by microbial fermentation in the world. Erythritol is widely used in many fields, such as food, medicine, chemicalindustry and so on.
 
Erythritol is white powder crystal in appearance, and its aqueous solution is colorless and nonviscous. Slightly sweet, the relative sugar sweetness is 60% - 70%, with a cold sensation. The calorific value of Erythritol is only 1 / 10 of that of sucrose, and it is easy to crystallize.
 
Erythritol is a kind of four carbon polyol, chemical name: 1,2,3,4-butaneterol. Erythritol does not contain reducing aldehyde group in its molecular structure. Its chemical properties are similar to other polyols. It is stable to heat and acid (suitable for pH 2-12). Compared with xylitol, sorbitol, mannitol, maltitol and other functional sugar alcohols, It is characterized by low molecular weight, high osmotic pressure and low hygroscopicity. The results show that the recovery rate of erythritol can reach 100% in finished food, so it can be used in baking or acid food.
 
Erythritol is similar to sucrose in sweetness, freshness and no aftertaste. Mixed with other sweeteners such as aspartame, sodium cyclamate and sucralose, it not only improves and coordinates the taste quality, but also has the advantages of synergistic increment and cost reduction.
 
Basic Properties of Erythritol
1.Sweetness
Erythritol has pure sweetness, which is very close to sucrose sweetness. It is refreshing and has no aftertaste. The sweetness is 60% - 70% of sucrose. It can be used as a diluent of high sweetness sweetener and mixed with stevioside or saccharin.
In addition, Erythritol can also cover up the bad taste caused by the combined use of a variety of sweeteners.
 
2.Non Cariogenic Properties
Microorganisms in the oral cavity, especially Streptococcus mutans, can't utilize and ferment erythritol, so it won't cause the decrease of pH value on the surface of oral teeth, produce dental plaque and lead to dental caries.However, it has a significant effect on the proliferation of Bifidobacterium, which can improve the body's immunity.The mechanism of erythritol against dental caries may be similar to xylitol, but it has some advantages over xylitol. The results showed that erythritol and xylitol had an effect on the growth of oral Streptococcus.When the content of erythritol was 4%, the growth of Streptococcus mutans was reduced by 71%, the growth of other two Strep tococcus mutans was also reduced by 76% and 77% respectively, and the antibacterial effect was more obvious than xylitol; The formation of mutant Streptococcus biofilm decreased by 31.32% under the conditioof 4% bryoglycol.
